I absolutely love banana bread, it’s definitely my favourite way to use up those brown bananas! I do already have a super easy gluten and dairy free banana bread recipe on my website which you can find by clicking here however, I have been working on a vegan recipe which I have finally perfected, it’s gluten free too of course. It’s ideal if you are vegan or not able to eat eggs! My favourite way to eat it is warm out of the oven, topped with peanut butter.

I am using your gluten-free & dairy free baking book and I would love to try the simple banana bread recipe to use up bananas, but I have not been able to find a gluten-free flour that is self-raising in my area in Canada, is there something I can add to my gluten-free flour that will make it self-raising?

You can also use a plain/all purpose gluten free flour blend and then add some baking powder :)
