Vegan banana bread (gluten free)

Ingredients

  • 3 large ripe bananas
  • 105 g light brown sugar
  • 80 ml sunflower oil
  • 1 tsp vanilla extract
  • 240 g gluten free self raising flour
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 100 g vegan chocolate chips

Instructions

  • Pre heat your oven to 180°C and grease and line a loaf tin.
  • Add your bananas to a large mixing bowl and mash with a fork. Add your sunflower oil, light brown sugar and vanilla extract and mix well.
  • Add your self raising flour, baking powder and cinnamon, mixing until fully combined.
  • Stir in your chocolate chips and then transfer the mixture into your lined loaf tin.
  • Bake in the oven for around 40 minutes, until golden brown on the top and an inserted knife comes out clean. You may need to cover the top for the last 10 minutes to prevent the cake from burning.
  • Remove from the oven and leave to cool before slicing and enjoying!
