Simple banana loaf (gluten & dairy free)

This simple banana bread is a great way to use up any leftover ripe bananas and takes a matter of minutes to put together! It’s also great with added chocolate chips, raisins or walnuts. If you do make this recipe I’d love to see, don’t forget to tag me in your photos over on social media.

Simple banana bread

Servings: 10 slices

Ingredients

  • 140 g dairy free butter
  • 140 g caster sugar
  • 2 medium eggs
  • 140 g gluten free self raising flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 2 ripe bananas (mashed)
  • Optional: chocolate chips, walnuts or raisins

Instructions

  • Preheat your oven to 180°C and grease and line a standard loaf tin.
  • To a large bowl add butter and sugar and whisk until creamy. Add the eggs and whisk again.
  • Add self raising flour, baking powder, cinnamon and mashed bananas and mix well. Add the optional chocolate chips, walnuts or raisins.
  • Transfer the mixture to the lined loaf tin and bake in the oven for 30-35 minutes, or until a skewer comes out clean.
