Simple banana bread
Servings: 10 slices
Ingredients
- 140 g dairy free butter
- 140 g caster sugar
- 2 medium eggs
- 140 g gluten free self raising flour
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 2 ripe bananas (mashed)
- Optional: chocolate chips, walnuts or raisins
Instructions
- Preheat your oven to 180°C and grease and line a standard loaf tin.
- To a large bowl add butter and sugar and whisk until creamy. Add the eggs and whisk again.
- Add self raising flour, baking powder, cinnamon and mashed bananas and mix well. Add the optional chocolate chips, walnuts or raisins.
- Transfer the mixture to the lined loaf tin and bake in the oven for 30-35 minutes, or until a skewer comes out clean.

This is the second of your recipes I have successfully tried.
Lots of substitutions required in our household – dairy free, gluten free, plus some other aversions. Just letting everyone know I swapped olive oil for the dairy free butter, honey for half of the sugar and used coconut flour, with some extra baking soda. And it worked!!!
