Sausage and Red Pesto Tray Bake (Gluten and dairy free)

My sausage and red pesto tray bake is one of my favourite lazy dinners because you literally throw everything into one tray and let the oven do the work. It is filled with potatoes, sausages, dairy free red pesto, onion, garlic, carrot, tomatoes, herbs and spices but is really easily adaptable depending on what you have in the house. I use the Asda Free From Red Pesto which is gluten and dairy free.

What else can I add to the traybake?

This traybake is really easily adaptable depending on what you have in the house. I like to add peppers, broccoli, baby corn, courgette etc.

Sausage and Red Pesto tray Bake

Servings 4 servings

Ingredients

  • 10 sausages (cut in half – ensure they are gluten free)
  • 1 kg baby potatoes (cut in half)
  • 2 carrots (diced)
  • 1 red onion (chopped)
  • 1 teaspoon chopped garlic
  • Handful of cherry tomatoes (chopped in half)
  • Dairy free red pesto
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Drizzle of olive oil

Instructions

  • Pre heat your oven to 200C and add your sausages to a large baking dish to start cooking. Bake in the oven for around 10 minutes. Meanwhile put your potatoes on to boil and par boil for 10 minutes.
  • Add the par boiled potatoes to the tray with the sausages alongside the carrot, onion, garlic and cherry tomatoes. Dollop over the red pesto, drizzle over a little olive oil and sprinkle over the dried herbs, salt and pepper.
  • Bake in the oven for around 40 minutes – stirring half way through, I like to wait until the potatoes are nice and crispy and the sausages are browned.
