My sausage and red pesto tray bake is one of my favourite lazy dinners because you literally throw everything into one tray and let the oven do the work. It is filled with potatoes, sausages, dairy free red pesto, onion, garlic, carrot, tomatoes, herbs and spices but is really easily adaptable depending on what you have in the house.
