Sausage and Red Pesto tray Bake

Servings: 4 servings

Ingredients

  • 10 sausages (cut in half - ensure they are gluten free)
  • 1 kg baby potatoes (cut in half)
  • 2 carrots (diced)
  • 1 red onion (chopped)
  • 1 teaspoon chopped garlic
  • Handful of cherry tomatoes (chopped in half)
  • Dairy free red pesto
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Drizzle of olive oil

Instructions

  • Pre heat your oven to 200C and add your sausages to a large baking dish to start cooking. Bake in the oven for around 10 minutes. Meanwhile put your potatoes on to boil and par boil for 10 minutes.
  • Add the par boiled potatoes to the tray with the sausages alongside the carrot, onion, garlic and cherry tomatoes. Dollop over the red pesto, drizzle over a little olive oil and sprinkle over the dried herbs, salt and pepper.
  • Bake in the oven for around 40 minutes - stirring half way through, I like to wait until the potatoes are nice and crispy and the sausages are browned.
