Pancakes are probably one of my all time favourite breakfast options, and these fluffy pancakes are both gluten free & vegan, and are the perfect weekend breakfast treat, combining only 6 ingredients. Which flour do you use for the pancakes?
For this recipe, and the majority of my bakes, I use the FREE gluten free self raising flour which works really well in gluten free baking.
Which dairy free milk do you use?
Any dairy free milk would work, I like to use Alpro Soy Milk and Rude Health Gluten Free Oat Milk.
How long will these pancakes last?
They are best served fresh and warm after making.
My pancake recipe is also perfect for making mini ‘pancake cereal’ pancakes. To make these follow the instructions above but instead of adding a ladle of batter per pancake, pipe tiny pancakes into your saucepan.

Followed the recipe but doubled it for 12 pancakes instead to feed everyone.
Disappointingly every one stuck and were ruined, tried a couple of pans and oils, same result.
Hi, If a pancake sticks to the pan it's generally because its not been greased properly or you are using the wrong kind of pan (it should be non stick). I've made this recipe 10+ times and its always perfect. Thanks, Alice
