Fluffy pancakes (gluten free & vegan)

Pancakes are probably one of my all time favourite breakfast options, and these fluffy pancakes are both gluten free & vegan, and are the perfect weekend breakfast treat, combining only 6 ingredients. Gluten free & vegan fluffy pancakes

Prep Time5 minutes
Cook Time10 minutes
Servings: 6 large pancakes

Ingredients

  • 300 g gluten free self raising flour
  • 2 tsp baking powder
  • Pinch of sea salt
  • 4 tbsp caster sugar
  • 1/2 tsp vanilla extract
  • 390 ml almond milk (can be substituted for any other milk alternative)
  • Oil or dairy free butter, for frying

Instructions

  • In a large mixing bowl combine self raising flour, baking powder, salt and caster sugar, mix well.
  • To the bowl add the vanilla extract and dairy free milk and whisk well until fully combined and lump free. The batter will be thick.
  • Add oil or butter to large saucepan and allow to heat on a medium to high heat for a couple of minutes. Spoon a ladle of pancake batter into your saucepan to form a large pancake shape.
  • Wait for bubbles to form on the surface of your pancake and then flip and cook for another 2 minutes.
  • Top with your desired toppings and enjoy!

My pancake recipe is also perfect for making mini ‘pancake cereal’ pancakes. To make these follow the instructions above but instead of adding a ladle of batter per pancake, pipe tiny pancakes into your saucepan.

    Just made these with my gluten and egg allergic child, a big hit! We did half the amounts for the first try.
    Can they be frozen once cooked, then reheated?
