Pancakes are probably one of my all time favourite breakfast options, and these fluffy pancakes are both gluten free & vegan, and are the perfect weekend breakfast treat, combining only 6 ingredients. 390mlalmond milk (can be substituted for any other milk alternative)
Oil or dairy free butter, for frying
Instructions
In a large mixing bowl combine self raising flour, baking powder, salt and caster sugar, mix well.
To the bowl add the vanilla extract and dairy free milk and whisk well until fully combined and lump free. The batter will be thick.
Add oil or butter to large saucepan and allow to heat on a medium to high heat for a couple of minutes. Spoon a ladle of pancake batter into your saucepan to form a large pancake shape.
Wait for bubbles to form on the surface of your pancake and then flip and cook for another 2 minutes.
Top with your desired toppings and enjoy!
My pancake recipe is also perfect for making mini ‘pancake cereal’ pancakes. To make these follow the instructions above but instead of adding a ladle of batter per pancake, pipe tiny pancakes into your saucepan.
