Homemade baked hash browns! (Gluten free & vegan)

My hash brown recipe is gluten free, dairy free and vegan. They only require a handful of ingredients (potatoes, onion, cooking oil, salt & black pepper) and are a great & tasty addition to your cooked breakfast, lunch or dinner!

Gluten free and vegan baked hash browns

Servings: 5

Ingredients

  • 400 g white potatoes
  • 1/2 onion
  • 1/4 tsp salt
  • Black pepper
  • Cooking oil

Instructions

  • Peel your potatoes and add to a saucepan. Par boil for 5 minutes before draining and leave to cool completely.
  • Pre heat your oven to 190°C and line a baking tray with baking paper.
  • Grate your potato and onion onto a clean tea towel and then squeeze out the excess liquid from the mixture. Add the mixture to a large mixing bowl.
  • Add salt and a generous helping of black pepper and mix well with a fork.
  • Brush a little oil on your baking paper (this is where you will place each hash brown). Pick up around 1tbsp of the mixture per hash brown and place on your baking tray. I used an egg ring to get the circular shape. Press down with a fork and brush the top of your hash brown with a little more oil.
  • Bake for around 15 minutes before using a spatular to turn over and bake for another 15 minutes. Enjoy!
