Slow Cooker Beef Ragu (Gluten free & dairy free)

Which gluten free pasta do you use?

You can use any gluten free pasta for this recipe, however I really like the Tenuta Marmorelle Gluten Free Pasta Mafaldine.

How long will this take to cook?

You can cook the ragu in the slow cooker on high for around 3-4 hours or on low for around 7-8 hours.

Can this be frozen?

Yes, freeze on the day you make it and defrost thoroughly before reheating.

Beef Ragu

Equipment

  • 1 slow cooker

Ingredients

  • 400 g diced beef
  • 1 tsp olive oil
  • 1 onion (diced)
  • 1 stick celery (diced)
  • 1 large carrot (diced)
  • 1 tsp crushed garlic
  • 300 ml gluten free beef stock (Optional: switch out 50ml of beef stock for 50ml of red wine)
  • 1 tbsp red wine vinegar
  • 1 tbsp gluten free worcestershire sauce
  • 1 tbsp tomato puree
  • 1 tin chopped tomatoes
  • 2 bay leaves
  • 1 tsp dried oregano
  • 1 tsp dried mixed herbs
  • 1/2 tsp dried thyme
  • Salt & black pepper
  • Serve with: gluten free pasta

Instructions

  • Add your beef to a frying pan on a medium to high heat with olive oil and brown.
  • Once you've browned off the meat, add to your slow cooker. Next add the diced onion, celery, carrot and garlic followed by the beef stock, red wine vinegar, Worcestershire sauce, tomato puree and chopped tomatoes. Mix well until everything is combined.
  • Add bay leaves, oregano, mixed herb, thymes, salt and pepper. Mix well and then put the lid on your slow cooker.
  • Cook on high for 3-4 hours, until the sauce starts to thicken OR on low for 7-8 hours.
  • Serve with gluten free pasta and enjoy.
