Chicken Caesar Smash Tacos (gluten free & dairy free)

My chicken caesar smash tacos are a really quick and easy lunch or dinner option which take just 15 minutes to make and taste delicious! They combine a gluten free taco with chicken mince, which is fried and then topped with a dairy free caesar dressing, bacon lardons, iceberg lettuce and dairy free cheese. Which dairy free caesar dressing do you use?

I use the Asda OMV! Deliciously Vegan Caesar Style Dressing which is gluten and dairy free however if you are able to eat dairy you can use any caesar dressing.

Which dairy free cheese do you use?

I use the Cathedral City Vegan cheese which I grate finely. However any vegan cheese would work or if you are able to eat dairy you can use a normal cheese.

Which gluten free tacos do you use?

I use the Old El Paso Gluten Free Tortilla Wraps.

How do you know when the chicken mince is cooked through?

This should take around 5 minutes as it is only a thin layer of mince. You can cut through one of them to check the chicken mince is no longer pink.

Chicken Caesar Tacos

Servings: 6 tacos

Ingredients

  • 250 g chicken mince
  • Salt and black pepper
  • Dried Mixed Herbs
  • 6 gluten free tacos (See FAQs)
  • Olive oil (For frying)
  • Bacon lardons
  • Dairy free caesar dressing (See FAQs)
  • Dairy free grated cheese (See FAQs)
  • Iceberg lettuce (shredded)

Instructions

  • Mix your chicken mince with salt, pepper and mixed herbs. Lay out your tacos and press a thin layer of the chicken mince covering each of them.
  • Add a little oil to a frying pan and then place the tacos (mince side down) in the pan and fry for around 5-7 minutes, until the mince is cooked through. Flip and cook on the other side for a minute.
  • Fry your bacon lardons until crispy.
  • Serve the tacos warm with shredded lettuce, the bacon lardons, caesar dressing and cheese.
