Chocolate Rice Krispie Easter Treats (gluten free, dairy free and vegan)

Which dairy free chocolate do you use for this recipe?

Any dairy free chocolate will work for this recipe. My favourite is the Nomo vegan Chocolate which melts really well and tastes great.

Which dairy free mini eggs do you use for the topping?

I use the Doisy and Dam Dark Chocolate Eggs which are vegan and do not contain any gluten.

Which Rice Krispies do you use?

Any gluten free Rice Krispies will work, however I use the Nestle GoFree Rice Pops.

How long will they last?

They will last in an airtight container in the fridge for up to 3 days.

Chocolate Rice Krispie Easter Treats

Ingredients

  • 120 g dairy free butter
  • 320 g dairy free chocolate (120g for the mixture an 200g for topping)
  • 120 g vegan marshmallows
  • 150 g gluten free Rice Krispies
  • 1 packet vegan mini eggs (for topping)

Instructions

  • Line an 8inch square baking tin with baking paper.
  • To a large saucepan add butter, 120g dairy free chocolate and marshmallows. Heat on a low to medium heat on the hob, stirring continuously, until everything is melted and combined.
  • To a large bowl add Rice Krispies and then pour over the melted chocolate mixture. Mix well until everything is coated.
  • Transfer the mixture to your baking tray and press down. Place in the fridge for 1 hour to set.
  • Melt the rest of the dairy free chocolate and pour over the top of the Rice Krispie treats. Smooth out and then add your mini eggs.
  • Place back in the fridge for a couple of hours to fully set before cutting into squares and enjoying.
