Prawn pasta with tomatoes, garlic and lemon (gluten free and dairy free)

My prawn pasta recipe is ready in just 15 minutes and is filled with tasty prawns, fresh garlic, cherry tomatoes and lemon juice! Which gluten free pasta do you use?

Any gluten free pasta or spaghetti will work for this recipe. My top tip for cooking gluten free pasta would be to undercook it slightly and use much more water than you think is neccessary! This way it doesn’t fall apart.

How many people does this recipe serve?

This recipe serves 2 people, however can be adapted for any amount.

Prawn pasta

Servings 2 people

Ingredients

  • 200 g gluten free spaghetti
  • 1 tablespoon olive oil
  • 1 onion (diced)
  • 2 spring onions (finely chopped)
  • 3 garlic cloves (minced – you can add more or less depending on your preference)
  • 10 cherry tomatoes (halved)
  • 150 g ready cooked prawns
  • Salt and black pepper
  • Juice of half a lemon
  • Handful fresh parsley

Instructions

  • Bring a large saucepan of water to a boil on the hob and add your gluten free pasta. Cook (I tend to find cooking gluten free pasta for a minute or two less than it states on the packet stops it from breaking!), drain and set aside. Save a little of your pasta water in a mug.
  • Meanwhile add your olive oil to a saucepan on a medium to high heat. Add your onion, spring onion and garlic and cook for 5 minutes.
  • Next add your cherry tomatoes and cook for a few minutes until the tomatoes start to release their juices slightly. Add your prawns and cook for a further couple of minutes.
  • Turn the heat to low and add your cooked gluten free pasta and a splash of pasta water to loosen. Season with salt and pepper and add your lemon juice. Mix well until everything is combined.
  • Remove from the heat and serve with fresh parsley.
