This really easy, ready in 15 minutes meal is perfect for a week night and tastes delicious! The chicken is cooked in a combination of sesame oil, honey and gluten free soy sauce then then topped with spring onions and sriracha mayo. Which soy sauce do you use?
I use the Kikkoman gluten free tamari soy sauce which you can buy in bulk on Amazon for a really reasonable price. It lasts for months in the fridge.
Which sriracha mayo do you use?
I really like the Flying Goose sriracha mayo which is vegan.
Can this be stored in the fridge and reheated?
Yes. This meal is great for meal prep and can be kept in the fridge for up to 48 hours and reheated in the microwave.
Sticky Honey Chicken
Ingredients
- 3 chicken breasts
- 1 tbsp sesame oil
- 3 tbsp gluten free soy sauce
- 3 tbsp honey
- Splash of rice wine vinegar
- Serve with: spring onion, sriracha mayo, rice and any stir fry vegetables of choice
Instructions
- Cut your chicken into cubes and set aside. In a large bowl mix sesame oil, gluten free soy sauce, honey and rice wine vinegar until combined. Add the chicken to the soy and honey mix and stir until the chicken is coated.
- Pour the chicken and sauce into a large (cold) saucepan and turn the heat to medium. Cook for around 10 minutes, until the chicken is cooked through and the sauce starts to thicken up. The sauce will become sticky, you will need to make sure you keep stirring as you cook so it doesn't burn.
- Top with spring onion and sriracha mayo. Serve with rice and any stir fry vegetables of choice.
