My super simple turkey kofta recipe makes a delicious dinner, perfect served with crispy potatoes or chips, salad, dairy free tzatziki and gluten free pitta or flat bread. The turkey kofta are filled with lean turkey mince, onion, garlic, gluten free breadcrumbs and plenty of fresh herbs and this makes around 12 kofta, which will serve 4 people. What gluten free breadcrumbs do you use in the kofta?
You can use any gluten free bread blitzed into breadcrumbs in the food processor. You can also buy gluten free breadcrumbs in multiple supermarkets such as Tesco and Asda.
How long will they last?
The kofta will last up to 48 hours in an airtight container in the fridge. I prefer to reheat them in the air fryer.
Which dairy free yoghurt do you use for the tzatziki?
I like to use a plain yoghurt with no sugars, my favourite is the Alpro Plain no Sugars.
How do you cook the kofta?
The kofta can be cooked in the oven for around 20 minutes or I prefer to cook them in the air fryer for 15 minutes. I use the Cosori Double Stack Turbo air fryer.
Turkey Kofta
Ingredients
For the turkey kofta
- 500 g lean turkey mince
- 1 egg
- 2 tbsp gluten free breadxcrumbs
- 1 onion (very finely diced)
- 1 teaspoon chopped garlic
- 1 teaspoon paprika
- 1 tablespoon fresh chopped parsley
- 1 tablespoon fresh chopped mint
- Salt and black pepper
- Chilli power (optional – I like to add half a teaspoon)
For the dairy free tzatziki
- 200 ml dairy free plain yoghurt
- 1/2 a cucumber (grated and all the water squeezed out)
- 1 teaspoon fresh chopped parsley
- 1 teaspoon fresh chopped mint
- Salt and black pepper
- 1/2 a lemon (juice)
Serve with (optional)
- Crispy potatoes or chips
- Salad of choice
- Gluten free flat bread or pitta
Instructions
Make the kofta
- To a large mixing bowl add your turkey mince, egg, breadcrumbs, onion, garlic, paprika, parsley, mint, chilli, salt and pepper. Mix really well until everything is combined.
- Roll into 12 kofta using your hands to form an egg shape. Place in the fridge for half an hour to firm up.
- Cook in the oven (for around 20 minutes, until cooked through) or air fryer (for around 15 minutes, until cooked through).
Make the tzatziki
- In a bowl mix your dairy free yoghurt with grated cucumber (ensure all of the water has been squeezed out of the cucumber), parsley, mint, salt, pepper and lemon juice. Set aside.
- Serve the kofta with homemade chips or potatoes, salad and gluten free flat breads.
