Which gluten free pastry do you use?
For this recipe I use a sheet of the Jus Rol Gluten Free Puff Pastry which can be purchased in Tesco, Sainsbury’s, Morrisons and Waitrose.
Which dairy free cream do you use?
Any dairy free cream would work, however I like normally use the Alpro Soy Single Cream.
Can I store this in the fridge and reheat?
Yes, store in an airtight container for up to 3 days and reheat in the microwave until piping hot. However this pie is best eaten fresh from the oven.
Turkey, pancetta and leek pie
Ingredients
- 1 tsp olive oil
- 1 onion (diced)
- 1 teaspoon chopped garlic
- 100 g cubed pancetta
- 3 leeks (sliced)
- 1 large carrot (diced)
- Large handful of leftover turkey (shredded)
- 2 teaspoons mixed herbs
- Salt & black pepper
- 2 tablespoons gluten free flour
- 500 ml gluten free chicken stock
- 250 ml soya cream
- 1 sheet gluten free jus rol pastry
- 1 egg (for an egg wash)
Instructions
- Pre heat your oven to 180C. To a large frying pan on a medium to high heat add olive oil followed by your onion, garlic and pancetta.. Fry for a few minutes and then add your leeks and carrot and fry for another 5 minutes, until everything starts to soften.
- Add your cooked turkey, mixed herbs, salt, black pepper and gluten free flour., stir so everything is coated. Turn the heat down to low and then add your chicken stock and simmer for a few minutes. Add the cream and simmer for another few minutes, it should start to thicken up slightly.
- Transfer the filling to a pie dish and then top with a gluten free puff pastry sheet. Brush with egg and bake in the oven for around 35 minutes, until golden brown.
