Fluffy pancakes (gluten free & vegan)

Pancakes are probably one of my all time favourite breakfast options, and these fluffy pancakes are both gluten free & vegan, and are the perfect weekend breakfast treat, combining only 6 ingredients. Gluten free & vegan fluffy pancakes

Prep Time 5 minutes
Cook Time 10 minutes
Servings 6 large pancakes

Ingredients

  • 300 g gluten free self raising flour
  • 2 tsp baking powder
  • Pinch of sea salt
  • 4 tbsp caster sugar
  • 1/2 tsp vanilla extract
  • 390 ml almond milk (can be substituted for any other milk alternative)
  • Oil or dairy free butter, for frying

Instructions

  • In a large mixing bowl combine self raising flour, baking powder, salt and caster sugar, mix well.
  • To the bowl add the vanilla extract and dairy free milk and whisk well until fully combined and lump free. The batter will be thick.
  • Add oil or butter to large saucepan and allow to heat on a medium to high heat for a couple of minutes. Spoon a ladle of pancake batter into your saucepan to form a large pancake shape.
  • Wait for bubbles to form on the surface of your pancake and then flip and cook for another 2 minutes.
  • Top with your desired toppings and enjoy!

My pancake recipe is also perfect for making mini ‘pancake cereal’ pancakes. To make these follow the instructions above but instead of adding a ladle of batter per pancake, pipe tiny pancakes into your saucepan.

  • Just made these with my gluten and egg allergic child, a big hit! We did half the amounts for the first try.
    Can they be frozen once cooked, then reheated?

  • Followed the recipe but doubled it for 12 pancakes instead to feed everyone.

    Disappointingly every one stuck and were ruined, tried a couple of pans and oils, same result.

    • Hi, If a pancake sticks to the pan it's generally because its not been greased properly or you are using the wrong kind of pan (it should be non stick). I've made this recipe 10+ times and its always perfect. Thanks, Alice
