This week I’ve been inspired to try creating some new dishes, including things that I wouldn’t usually eat. I tend to find that I cook the same, or similar meals every week, and wanted to mix it up a bit with some new recipes. I created these sweet potato bean burgers as a dish that everyone can enjoy, they are gluten free, dairy free, suitable for vegans, egg free and soya free, and can be cooked in advance and reheated when needed. I used a mixtures of chickpeas, sweet potato and spices for the burgers and then coated them in Free From breadcrumbs for an extra crunch. They ended up tasting delicious served in a gluten free roll with salad, jalapeños, dairy free cheese and ketchup so I thought I’d share my recipe so that you guys can try it too. I used a food processor to make my burgers however if you do not have one, you could also just use a masher.

Ingredients (makes around 6 burgers):
250g sweet potato chunks
400g tin of chickpeas (alternatively, use kidney beans, butter beans, black beans)
1 clove of garlic, crushed
The juice of 1 lemon
1/4 tsp chill flakes
Salt and pepper
3/4 tsp ground cumin
1/2 tsp paprika
1/2 tsp oregano
Handful of fresh coriander (chopped)
Gluten free breadcrumbs (I used ready made breadcrumbs by Orgran)
