Triple chocolate cookies! (Gluten & dairy free)

My gluten and dairy free triple chocolate cookies are chocolate flavoured, filled with chunks of dairy free white chocolate and dairy free milk chocolate – what’s not to like!? Triple chocolate cookies (GF, DF)

Ingredients

  • 100 g dairy free butter (I use the Stork 'Perfect for baking' gold packet)
  • 75 g light brown sugar
  • 50 g granulated sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 160 g gluten free plain flour
  • 1 tsp baking powder
  • 1/4 tsp xanthan gum (omit if you flour blend already contains this)
  • 2 tbsp cocoa powder (Ensure it's dairy free!)
  • 175 g dairy free milk chocolate
  • 75 g dairy free white chocolate

Instructions

  • Pre heat your oven to 180°C and line 2 baking trays with baking paper.
  • Melt 100g of your dairy free milk chocolate on the hob. Leave to cool.
  • Whilst the chocolate cools, whisk together your dairy free butter, light brown sugar, granulated sugar and vanilla for a few minutes until creamy.
  • Add your melted chocolate and egg to the mixture and whisk again until combined.
  • Sift in your self raising flour and cocoa powder. Mix well.
  • Break up your chocolate into large chunks (75g dairy free milk chocolate and 75g dairy free white chocolate). Stir into the mixture.
  • Using about a tablespoon of mixture per cookie, roll into balls and place spaced out on your baking tray. The mixture will make around 12 (6 per tray).
  • Bake in the oven for 10 minutes. The cookies will still be soft but will firm up as they cool.

  • Hi there this cookie looks yummy, though I have a little concern about the sugar, my daughter has autis spectrum disorder and sugar should be avoided, ASD would likely have GF and Casein Free products and food but also is very strict with the use of sugar, I have read coconut sugar is allowed, can I use that anyway? Thank you

    • Hi, thank you. I haven't tried making the cookies with coconut sugar but if you do try it then do let me know how you get on. Alternatively I'm sure there are lots of sugar free recipes out there that are fab :) xx
