Pre heat your oven to 200C. Bring a large saucepan of water to the boil on the hob. Add the baby potatoes and cook until tender.
Meanwhile in a small bowl mix melted butter, mixed herbs and minced garlic. To a large baking tray add a drizzle of olive oil.
Drain your potatoes and spread on your baking tray. Using a fork or the top of a glass, crush your potatoes. Drizzle over the melted garlic and herb butter and top with salt & black pepper.
Place in the oven and bake for around 30-40 minutes, or until golden brown and crispy, ensuring to shake the tray every 10 minutes so they don't stick.
Serve warm topped with fresh chives.
