Double Chocolate Banana Bread (gluten free and dairy free)

For this recipe, and the majority of my bakes, I use the FREEE Gluten Free Self Raising Flour which works really well in gluten free baking.

Which dairy free chocolate chips do you use?

For this recipe I use the Sainsburys Free From Chocolate Chips.

How long will this cake last?

It will last in an airtight container for up to 3 days however, is always best served on the day you make it.

Double chocolate banana bread

Prep Time 15 minutes
Cook Time 1 hour
Servings 12 servings

Ingredients

  • 3 ripe bananas (Mashed)
  • 120 ml vegetable oil
  • 160 g caster sugar
  • 2 medium eggs
  • 60 g dairy free yoghurt
  • 1 teaspoon vanilla extract
  • 160 g gluten free self raising flour
  • 1/4 teaspoon xanthan gum (omit if your flour blend already contains this)
  • 1 teaspoon baking powder
  • Pinch of salt
  • 50 g cocoa powder
  • 1 espresso shot (30ml coffee)
  • 200 g dairy free chocolate chips

Instructions

  • Pre heat your oven to 180C and line a loaf tin.
  • To a large bowl add your mashed banana, vegetable oil and caster sugar. Mix well until combined and then add your eggs, dairy free yoghurt and vanilla extract and mix again until fully combined.
  • Next add the gluten free flour, baking powder, salt and cocoa powder. Mix well until combined.
  • Pour in the shot of espresso and mix well. Leave to sit for a few minutes and then finally add your chocolate chips and mix again.
  • Pour into your lined loaf tin and place in the middle of your oven to bake for around 60 minutes. It may be slightly more or less so keep checking your oven until a skewer comes out clean.
