Pre heat oven to 180°C and line a large circular baking tray with baking paper.
Unroll both sheets of puff pastry and cut both into 9 inch circles (I did this by tracing a bowl to ensure both sheets were the same size).
Place one of the circles onto the lined baking tray and spread the mincemeat so that it covers the entire circle. Place the other circle on top and press them together lightly to seal.
Mark the centre of the circle using a small cookie cutter or glass.
Cut the circle into 16 equal sized pieces (start by cutting into 4, then 8, then 16). Grab 2 pieces of pastry and twist them 2 or 3 times, continue to do this for all of the pieces of pastry until you have the snowflake.
Brush with beaten egg (or dairy free milk for a vegan option) and bake in the oven for around 25 minutes, until golden brown and cooked through.
Dust with icing sugar and serve warm.
