White chocolate and strawberry blondies (GF, DF)

  • 85 g dairy free butter
  • 200 g dairy free white chocolate (I used the Sainsbury's own Free From version)
  • 2 medium eggs
  • 160 g caster sugar
  • 140 g gluten free plain flour
  • Punnet of strawberries
  • Icing sugar to decorate


  • Pre heat your oven to 180°C and grease and line a 20cm square baking tray.
  • Melt your butter and half (100g) of your white chocolate on a low heat on the hob, ensuring to stir continuously so it doesn’t burn. Once melted, leave to cool for a few minutes.
  • In a large mixing bowl whisk your eggs and caster sugar using an electric whisk for a couple of minutes until it become a creamy consistency.
  • Pour your melted white chocolate/butter mixture into your egg/caster sugar mixture and stir well. Fold in your flour.
  • Break up the rest of your white chocolate and toss in a little extra flour. Stir into the mixture, leaving a few to press into the top.
  • Cut your strawberries into strips and toss in a little flour.
  • Spoon the mixture into your baking tray and press the strawberries and leftover white chocolate chunks into the top.
  • Bake for 40 minutes or until golden brown and cooked through. Enjoy!
