Have you ever seen a gluten free and veggie Christmas sandwich in the supermarkets before?! I haven’t, so I decided to take matters into my own hands with a little help from Schar. I used their yummy Wholesome Seeded Loaf to create the tastiest sandwich filled with homemade stuffing, veggie sausages, cranberry sauce, mayo and lettuce. Using a food processor (or your fingers if you don’t have one), pulse the bread to form breadcrumbs. Set aside. Preheat your oven to 180C.
To a saucepan add the diced onion and butter. Fry until the butter is melted and onion is starting to brown. Add the dried sage, thyme, salt and black pepper and mix well.
Remove from the heat and add the breadcrumbs, mix well so they are fully coated in the onion mixture and transfer to a small baking dish. Press into the dish and bake in the oven for 20-25 minute.
For the sandwich
Bake the veggie sausages in the oven (according to the packaging).
Assemble your sandwich by spreading a layer of cranberry sauce on one slice of bread and vegan mayonnaise on the other. Fill with veggie sausages, stuffing and lettuce. Enjoy!
