Melt in the middle chocolate puddings (Gluten and dairy free)

My gluten and dairy free melt in the middle chocolate puddings are gooey, chocolatey and delicious! They take just 10 minutes to cook and are the perfect dessert served with dairy free cream or ice cream.

Melt in the middle chocolate puddings

Servings: 4 servings

Ingredients

  • 30 g dairy free butter
  • 75 g caster sugar
  • 2 medium eggs
  • 1/2 teaspoon vanilla extract
  • 25 g gluten free plain flour
  • 150 g dairy free dark chocolate (melted)

Instructions

  • Preheat the oven to 180°C and grease 4 small ramequins with butter. 
  • Using an electric whisk, whisk butter and caster sugar in a large bowl until combined. Add the eggs one at a time and continue to whisk until pale and frothy. Add the vanilla extract and whisk again. 
  • Fold in the gluten free flour and melted dark chocolate.
  • Divide the mixture between 4 ramequins and bake in the oven for 10 minutes for a runny middle and 12 minutes for a slightly more cakey middle. Serve warm.
