Classic Crepes (Gluten and dairy free)

With pancake day coming up next week I realised that I didn’t have a recipe on my website for classic crepes! So here goes, these are made with just a handful of simple gluten and dairy free ingredients and are perfect if you decide to make them for pancake day, or as a yummy breakfast any time of the year. They are delicious topped with lemon and sugar, chocolate spread and strawberries or fruit and maple syrup! Classic Crepes

Prep Time5 minutes
Cook Time5 minutes
Servings: 6 large crepes

Ingredients

  • 150 g gluten free plain flour
  • 3 medium eggs
  • 350 ml dairy free milk
  • 20 g dairy free butter (Melted, plus extra for frying)

Instructions

  • To a large bowl add gluten free plain flour and 3 eggs, whisk until combined.
  • Slowly add dairy free milk and continue to whisk until you have a smooth batter.  
  • Add the melted butter to the batter and whisk again until combined. 
  • Heat a frying pan on a medium heat and add a small knob of butter. Add a ladle of batter into the frying pan and swirl the pan so it’s fully coated, fry for 2 minutes or until bubbles form. Flip and fry for a further minute, until cooked through. Serve warm.

    I cut the milk down to 250ml when using KoKo milk (it’s much thinner than other non dairy milks) and they turned out great!
