White chocolate and strawberry blondies (GF, DF)

My fudgey white chocolate and strawberry blondies and perfectly indulgent, you would never know they are both gluten and dairy free! With chunks and white chocolate throughout and topped with juicy fresh strawberries. Don’t forget to tag me in your photos over on social media if you do make them!

You will need:

85g dairy free butter

200g dairy free white chocolate (I use the Sainsburys own Free From bar)

2 medium eggs

160g caster sugar

140g gluten free plain flour (plus a little extra for dusting)

Punnet of strawberries

Icing sugar to decorate

Method:

  1. Pre heat your oven to 180°C and grease and line a 20cm square baking tray.
  2. Melt your butter and half (100g) of your white chocolate on a low heat on the hob, ensuring to stir continuously so it doesn’t burn. Once melted, leave to cool for a few minutes.
  3. In a large mixing bowl whisk your eggs and caster sugar using an electric whisk for a couple of minutes until it become a creamy consistency.
  4. Pour your melted white chocolate/butter mixture into your egg/caster sugar mixture and stir well. Fold in your flour.
  5. Break up the rest of your white chocolate and toss in a little extra flour. Stir into the mixture, leaving a few to press into the top.
  6. Cut your strawberries into strips and toss in a little flour.
  7. Spoon the mixture into your baking tray and press the strawberries and leftover white chocolate chunks into the top.
  8. Bake for 40 minutes or until golden brown and cooked through. Enjoy!
