Easy sausage rolls! (gluten free & vegan)

My easy gluten free and vegan sausage rolls only require a handful of ingredients, and really are the perfect tasty lunch, dinner or snack option for everyone! I make my sausage rolls using the gluten free Jus Rol ready rolled pastry which is available to buy in most major UK supermarkets, it’s naturally dairy free and vegan too which is great.

My favourite sausages to use for these are the Linda McCartney Lincolnshire style sausages, they can be found in the freezer section of Sainsburys, Tesco and Waitrose and are naturally gluten free, just take them out the freezer to defrost a couple of hours prior to assembling your sausage rolls (If you aren’t vegan, these can be substituted for normal sausages or sausage meat). The only other ingredients you will need is some mustard (make sure its gluten free!), sesame seeds and almond milk.

You will need (Makes 12 mini sausage rolls):

1 sheet of Jus Rol gluten free pastry

6 Linda McCartney Lincolnshire Sausages (defrosted)

30ml Almond milk (or other dairy free milk alternative)

A handful of sesame seeds

Mustard (ensure its gluten free)

Method

  1. Pre heat your oven to 180°C and line a baking tray with baking paper.
  2. Un roll your Jus Rol pastry and cut it in half lengthways so that you have 2 long strips of pastry, spread around a teaspoon of mustard across the bottom of each piece of your pieces of pastry (see below photo).

3. In a large bowl, using a fork crush your defrosted sausages to form a sausage meat. Spread the sausage meat across the bottom of your pastry, on top of the mustard spread.

4. Roll both strips of pastry into a large sausage roll shape (see below photo).

5. Cut each strip into 6 small sausage rolls. Cut slits across the top of each sausage roll, brush with a small amount of almond milk and sprinkle with sesame seeds.

6. Bake in the oven or around 30 minutes. Or until golden brown and cooked through. Enjoy!
