Now that the weather is starting to get warmer and the sun is shining, it’s officially the start of picnic and BBQ season (my favourite time of the year!). I’ve teamed up with Nairn’s to create a gluten and dairy free picnic spread using some of their yummy products, as well as some of my all time favourite picnic essentials! As a Coeliac, picnics can tend to be a cross contamination nightmare, so in our family we make sure everything is totally gluten free (even for the non Coeliacs) to prevent any cross contamination, and these Nairn’s products were perfect. I also ensured that the picnic was entirely dairy free and veggie too which caters for all of my families dietary needs.
A picnic wouldn’t be a picnic without snacks such as crisps and bars, so I used the new Nairn’s Pop Oats which are now available to buy at the Coop and Morrisons and Oat Bars which are now available to buy at Waitrose. The Pop Oats are only 83 calories per bag, with 60% less saturated fat than an average bag of crisps and high in fibre. They come in 3 different flavours – salt and vinegar, BBQ and sour cream and onion (Note: the sour cream and onion flavour contain milk so we didn’t have any of these). My favourite are definitely the salt and vinegar, and I’ve also been taking them to work for a mid morning snack!
The Pop Oat bars are also suitable for vegans, high in fibre, contain nothing artificial and have 40% less sugar than the average cereal bar! They are the perfect picnic accompaniment but also great in your lunch box, or as a mid morning/afternoon snack. They come in 3 different flavours – cacao and orange, mixed seeds and protein, apple and cinnamon.
As well as the new Nairn’s products, I also picked up some of their Rosemary Sea Salt Flat Bread crackers to include in the picnic. These are also gluten & dairy free and were perfect alongside a board of Moroccan spiced hummus, smashed avocado, dairy free cheese slices, red and orange peppers, carrots, tomatoes, falafel and a pesto pasta salad.
Another one of my picnic essentials has to be sausage rolls, so I made a quick and easy gluten free and vegan version. To make the sausage rolls you will need:
1 sheet pre rolled gluten free pastry
6 vegan sausages
2 tbsp sesame seeds
Simply pre heat your oven to 180°C and line a baking tray with baking paper. Cut your pre made pastry in half length ways and take your sausages out of their casing. Divide the sausage meat into 2 and spread along the edge of both pieces of pastry in a cylinder shape. Roll into sausage roll shapes, cut into small sausage rolls and then brush with almond milk and sprinkle with sesame seeds. Cook for 20 minutes.
Finally for a picnic pudding I used the Nairn’s gluten free muesli to make sultana flapjacks using just 5 ingredients! To make the flapjacks you will need:
125g dairy free butter
125g light brown sugar
2 tbsp golden syrup
250g Nairn’s muesli
Simply pre heat your oven to 180°C and line a square baking tray with baking paper. Combine your butter, sugar and golden syrup in a saucepan and melt slowly. Add your muesli and sultanas and mix well. Transfer to a baking tray making sure to press down and bake for 15 minutes!
So there you have it, a delicious gluten free, dairy free and veggie picnic for all the family using some of my favourite picnic essentials.
