A gluten & dairy free pancake day (includes my fluffy american style pancake recipe)

With pancake day coming up next week, I thought I would put together a post based entirely around gluten and dairy free pancake options, including a recipe for fluffy American style pancakes, my favourite pre made pancake mix and my favourite ready made pancakes! This way, you have 3 different options this pancake day  depending on how you are feeling meaning you won’t miss out just because you have allergies/intolerances! So to start with, here’s the recipe for my fluffy american style pancakes that are both gluten and dairy free and taste delicious! They are perfect topped with lashings of maple syrup and berries, the classic lemon and sugar combination or you could go wild and top with chocolate, peanut butter, banana or anything else of your choice!

You will need (Makes 6 pancakes):

200g plain gluten free flour

2 medium eggs

2 heaped tsp baking powder

2 tbsp caster sugar

1/4 tsp pink Himalayan sea salt

275 ml almond milk

30g melted dairy free butter + extra for frying

Frying pan

Food processor (optional)

Method:

  1. Add all of your ingredients (flour, eggs, baking powder, sugar, salt, almond milk, melted butter) to a food processor and mix until fully combined. If you do not have a food processor, mix by hand by adding your dry ingredients (flour, baking powder, salt) to a bowl, make a well in the middle. Add the melted butter, almond milk and eggs to the well and mix to a smooth batter.
  2. Once you have a smooth batter, add a small knob of butter to a frying pan and melt on the hob. Once melted, add a ladle of mixture to the frying pan and cook for a few minutes. Once the pancake is bubbling, turn over and cook for a further minute until golden brown.
  3. Keep the pancakes warm in the oven whilst you cook the rest of the pancakes.
  4. Serve with maple syrup and berries or other toppings of your choice!

If you don’t fancy making pancakes from scratch, you could also try using a gluten and dairy free pancake packet mix. My favourite is the Superfood Baker morning dreamer pancake mix with baobab powder. Use this mix to make quick, easy and tasty pancakes.     These pancakes looks gorgeous, I’m going to have to try them. I usually just have jam on my pancakes but your topping ideas make me want to try something different.
